Double Dark Chocolate Zucchini Loaf (vegan, dairy-free, gluten-free)

Chocolate-y, personal, healthy, fun, that describes this chocolate zucchini loaf perfectly! This loaf is unbelievably moist and rich with chocolatey goodness in every bite, vegetables included, and vegan! No eggs, no dairy, and gluten-free if you use the flour we recommend.

In Medium Bowl
1 flax egg 1 tbsp flax seed + 3 tbsp water)
1 cup zucchini, washed and pureed roughly (Please buy organic zucchini only; it is on the "dirty" list with the EWG
1/2 cup maple syrup
1/3 cup nut butter (I used almond butter)
1 tbsp canola oil
½ cup plant milk (I used almond milk)
1 tsp lemon juice
1 tsp vanilla
In Large Bowl
1 cup gluten-free all-purpose flour
1/2 cup cacao powder
2 tbsp black cocoa (optional, for dark dramatic color)
1 tsp baking soda
pinch of salt
Useful Equipment
1 can organic canola spray (I use this brand)

Make flax egg and set aside for 5 minutes.
Preheat oven to 350 F.
Spray an 8-inch by 4-inch loaf pan with organic canola spray, and dust with cacao powder

Tuna Salad Recipe

SO GOOD! This Tuna Salad is easy and healthy. The surprising secret ingredient in this tuna salad makes it so addictive. A fresh and feel-good tuna salad recipe!

Ingredients 20 oz tuna in water (four, 5-oz cans), well drained. 1 medium onion 1 1/3 cup finely diced 1 medium granny smith apple seeded and diced 1 avocado diced (removing the skin and seed is implied) 1 cup real mayo or to taste 1/2 tsp fresh lemon juice or to taste 1/2 cup sliced almonds or chopped walnuts toasted 1/8 tsp black pepper or to taste
Instructions Toast nuts on a dry skillet until golden. Remove from heat and cool slightly. To drain tuna, I open the lid then press it down firmly over the tuna to drain off as much water as I can squeeze out. If your tuna is too wet, your salad will be wet. Full instructions recipe visit:
